Buffalo Chicken Pasta Salad

Since my last post I've had Easter Sunday and a beach get away. Anyone that knows me personally has heard me lament my moving where I'm no longer surrounded by water. I love where I live but just seeing water always makes me feel more calm and at peace. Whether we go to the beach, a lake, drive past an inlet or sit by the pool it doesn't really matter... though being at the beach is probably my top choice. Just like the best "me time" I get at home is soaking in my bath tub for an hour uninterupted. I lived near water my whole life until I moved to this area and didn't even realize that driving over the bridge or seeing the ships passing was that inpactful. Now, whenever we go to the shore I no longer take that view for granted.

The fun of being with family and friends followed by a few days without stress by the water have me ready for something light, easy and fun for lunch. Since I seriously love buffalo sauce I'm going to share with you my recipe for Buffalo Chicken Pasta Salad. This is so simple. Really just mix together and eat.


I like to use Frank's brand Buffalo Wing Sauce. We buy this at Sam's Club in a large container but we also use Buffalo Sauce on salads, fries and grilled chicken fairly often. The Light Ranch I used is from one of my all time favorite stores, which we all know to be Aldi.

Ingredients:

2 baby carrots or 1 small carrot shredded

1 stalk celery, finely diced

1 green onion (scallion), thinly sliced

12 oz tri-color rotini

1 boneless, skinless chicken breast, poached & shredded

1/2 cup Frank's Red Hot buffalo sauce

1/3 cup Tuscan Garden light ranch dressing


Cook pasta according to box directions.

Once cooked rinse with cold water to stop the cooking process.


In a seperate sauce pan poach chicken breast until cooked through.

Once chicken is cooked shred or finely dice. Then let cool until needed.





I like to prep vegetables while pasta and chicken is cooking.









Once the pasta and chicken are cooled I can mix everything together. I like to let this sit in the fridge for about an hour before serving.
