We are more than half way through March and for me that is always a very busy month. The company I work for full time has a fiscal year end in March so the pressure is on to follow up on anything old that might still be open. Unfortunately, I stress eat and my snacking isn't always great. However, the recipe today is a healthy one that I do like to add in and it helps keep me from having too many of those bad treats.
Being as it is March I also had a Lady's Night In - St Patrick's Themed party the other week. We had snacks ordered in from Ireland, a charcuterie board from a local place, a rainbow veggie board and plenty of green. Being able to relax and hang out with some people I love helped bring my stress level down significantly for the month. Of course, being me I had to dress the part. I always plan to keep things simple and yet I always seem to be a bit more extra than even I plan in the beginning.
Our recipe for today is pretty green as well but I can't say this recipe had any Irish influence. I actually love items covered in buffalo sauce and dipped in ranch. I will make buffalo fries and buffalo chicken, buffalo grilled chicken salad and buffalo ranch wraps with all types of fillings. However, there are times I don't want a wet sauce all over my food but still want the flavors. For that reason I like to keep Frank's Red Hot Seasoning on hand. Personally, I buy the big jar at Sam's Club or on Amazon but the smaller ones can be found in Walmart or other grocery stores.
You might be surprised if you want just a small sprinkle of heat on your food how often you use this stuff. Also, adding it to any dry rub you are already using adds the perfect amount of kick to your food. I seriously LOVE this stuff for certain recipes. (Before you ask, no I have no sponsorships or other reasons to share products on my blog other than I really believe they are amazing.)
The other ingredient that really brings this broccoli together is Hidden Valley Ranch seasoning. Pretty much everyone in the USA eats ranch pretty often so this shouldn't come as a surprise. I like to buy the large container of ranch seasoning so I can sprinkle some onto things just like the Frank's. You may buy the packet to make dip or dressing but having control over how much is added by buying the larger container is pretty great.
Since this recipe is for Buffalo Ranch Broccoli I'm sure you realize these are the 2 main flavor components for the recipe. The only other ingredients are broccoli, seasoning salt and oil.
Ingredients:
2 cups cut raw broccoli
1 teaspooon Hidden Valley Ranch seasoning
1 teaspoon Frank's Red Hot seasoning
1/2 teaspoon seasoning salt
1 teaspoon oil (I used extra virgin olive oil but almost any oil will do for this recipe)
I started with my broccoli in a gallon bag because you will be shaking it all up to season evenly before cooking your broccoli. I found this was the best way to evenly coat everything.
First, mix together your seasonings in a small bowl or cup.
1 tsp ranch
1 tsp hot
1/2 tsp seasoned salt
Add 1 tsp oil to your bag then add the seasonings. Shake! Shake! Shake!
Make sure everything is pretty evenly seasoned.
Put everything in your air fryer basket and cook at 390° for 6 minutes. The broccoli will be cooked but still have a slight bite. If you want them to be softer just a couple minutes to the cook time.
I like to add just a tiny spinkle of shredded parmesan cheese to the top of mine when I serve. This makes an excellent snack or side dish. Also, this dish is not actually very spicy. You can always add more seasoning or a dash of actual hot sauce to the end.
