It is my birthday week and I am excited! I know that I'll have dinner out with my family this coming weekend and ice cream cake in my near future. While gearing up for that outing we decided to also go out this past weekend to see my favorite faith based movie, Courageous. If you have never seen it I highly recommend giving it a watch and bring some tissues while you're at it. Additionally, this is in theaters even though it was released 10 years ago because they have added to it and extended the film. Don't you just love when your favorite things come back around?
Another thing I love is using up leftovers so things don't go to waste. Yesterday I made a simple dinner of chicken tenderloins, brown rice and broccoli. Nothing exciting but filling and healthy. At the end we had two pieces of chicken left over so today I decided that some pasta salad would be a nice way to use that chicken.
This is one of those super simple recipes where you just chop everything up and mix it together. Any time we can have lunch ready to go in minutes is a good day.
6 oz penne pasta - cook, drain and rinse with cold water
1 handful raw spinach chopped
4 pieces of sun dried tomatoes finely chopped
1 scallion, green & white parts, finely chopped
fresh black pepper, to taste
2 chicken tenderloins, chopped (or whatever leftover chicken you have available)
1/4 cup Creamy Italian with Romano Cheese dressing
***shaved parmesean or crumbled feta also make excellent additions to this salad
Chop up everything and mix. That's seriously all you need to do. If you do this in advance and leave in the fridge for an hour or two it is even better!
Having the spinach and sundried tomatoes along with the creamy romano cheese dressing rather than just your regular cherry tomatoes, assorted vegetables and regular italian dressing gives this a fun and tasty spin on a classic.
