Cilantro Lime Roasted Radishes

Can you believe that it will be Thanksgiving in just one week???? I dropped the ball and only just paid attention to that fact about 2 days ago. I keep thinking it is so far away and instead it is knocking on my doorstep. I hope, even with the mad crazy world we live in these days, that you have some plans to keep you happy. Whether it is watching football, joining some family, finding a way to relax or shopping until you drop enjoy every minute that you can.


I mentioned the other week that I have an entire collection of hats. I still haven't decided to show just how bad that collection is but for fun I am posting what I wore to church this past Sunday. I love the butterflies on this dress and since I have a hat of the same color this was my outfit for heading out of the house. What do you think?

This week has fallen apart on my for my blogging plans. I had 2 other recipes I was still trying to get just right and I didn't manage to fix it. They either aren't coming out the way I want or the flavor is missing an ingedient or something. But then it came to me! Roasted Radishes!!! Now don't go backing away thinking this is just the peppery crispy vegetable from your salad. It is that but radish can be so much more.


I have an amazing love of potatoes. When I was a kid my dad would call me the potato queen because I could eat a potato for breakfast, lunch, dinner & snack without batting an eye. Cooking the radishes gives them a potato like quality that is a fantastic swap if you are trying to cut back on calories or carbohydrates. The first time I heard this I didn't believe it but I went home and tried a recipe for homefried radish wherein I cooked the radish with onion in some bacon grease. They were fantastic! Given frying in bacon grease is rarely my go to idea any longer this is one of my favorite ways to prepare my radishes.


Cilantro Lime Roasted Radishes in the Air Fryer are super simple and quick. You can be enjoying your potato substitue in less than 15 minutes. I promise.


First thing first! You need to cut off any stems and clean any dirt off of your radish. Then dice them into bite sized pieces. The ones I bought were quite large this time so I cut them mostly into eighths. Often times the smaller ones I buy will only be cut in half or quarters though.



Once your radishes are clean and cut it is time to mix up the dressing to season them with. This is also super simple. Just add everything in and mix it well.

1 tablespoon extra virgin olive oil

1 teaspoon lime juice

1/8 teaspoon ground cumin

1/8 teaspoon paprika

1/4 teaspoon garlic powder

dash of salt & pepper

Once it is all mixed together just pour and mix with your radish.

Once you have everything coated just cook in the air fryer at 370° for 8 to 10 minutes. I do like to check it about halfway through and shake the basket to be sure everything is cooking well. This photo is what it looked like at 8 minutes in my air fryer.

Once they are cooked through chop some cilantro and toss with the radishes. I also added an extra sprinkle of salt at this stage because I like a touch extra salt on my "potatoes". I would suggest eating them right away because I don't find them quite as good if they cool down too much. However, you can always put them back in to raost for a couple minutes to heat everything back up if needed. I would reheat them at about 350° and only for 2 or 3 minutes though unless you want them extra crispy.

You can always experiment with other flavors and seasonings too. If you ever try them another way I hope you let me know so I can try your version as well.
