Hey everyone!!!! I am sure you noticed that last week there was no post. That is because after some thoughts and juggling responsibilities I decided that I will be posting bi-weekly rather than every week. Between working full time, being a mom, a wife and all the other miriad responsibilities I hold every week was a bit hard to stay on top of with posts. That said I hope that this finds you well and that you didn't miss me too much.


In that time we had Valentine's Day which is always a favorite to celebrate in our home. My husband and I tend to avoid restaurants on V Day and the nearest weekend so we went out on Monday. Also, we usually host a sleepover with my daughter's friends so other parents can have dates without looking for babysitters. I took my daughter and one of her good friends to the YMCA indoor pool over the sleepover weekend. They always have a blast there with the big inflatable over the water to climb, slide and jump from for the biggest splash. I managed to swim a few laps for my own exercise while they went nuts. And that's my child mid-air doing her favorite thing.... jumping from the top.

With Valentine's Day though there is always chocolate involved. We always give my daughter a little gift and my husband also sent me Sharri's Berries, a funny card, a bear, truffles and what feels like a million roses. It doesn't matter that I tell him I don't need anything special because he still goes above and beyond to make me feel special anyway. Even when we are broke and without ability to do anything super special he has gone to a grocery store and found some little container of chocolates and a funny card. As cheesy as it sounds my husband really is my best friend and the best person in my life. Without him I would be lost.

With all that chocolate around I realized I had not yet told you all some of my quick sweet go to snacks. So here are just a few quick things I use to kick that sweet tooth.


I love berries. Obviously if my gift includes chocolate covered berries you can imagine that even without the chocolate I am down with the sweet fruit. Strawberries, blueberries, blackberries, raspberries. I understand that eating them straight up or with whipped cream is always good but every once in a while I'll cut them into smaller pieces and put them in a bowl with milk as if it is cereal. Really pretty tasty.

Next has been a favorite of mine forever. Even when I was younger I had a love of chocolate ice cream. Therefore, something we always keep in the freezer is No Sugar Added Fudge Pops. Cold, creamy and chocolatety goodness for only 40 calories. That is always my first go to choice.

Coffee!!!! Coffee is always a big thing in my life. In the morning I do not function well without a cup of coffee. This blog is called Coffee Required for a reason. That said one of my favorite coffee brands is Crazy Cups. You can find them at www.crazycups.com and the flavors are incredible. I like to add fat free half and half with a splash of Jordan's Skinny Syrups. You can find them at www.skinnysyrups.com. I also use the syrups mixed with club soda, water or even homemade whipped cream for all sorts of fun flavored treats.

Also, in addition to coffee I love tea. Lately my go to has been from Stash. My biggest flavor of choice is Chocolate Hazelnut and since this comes in decaf it is a fantastic choice for that zero calorie treat jus before bed.


If you couldn't tell about my love of chocolate yet look out! Here is another choclate favorite. This is actually a recent addition to my sweet treat line up as it includes a new product from Enlightened. I have been buying Snack Pack sugar free pudding cups as something quick. Recently I discovered the Enlighted Dough Bites in one of our grocery stores. Now I like to pour a pudding cup into a larger cup and add half a serving of dough bites mixed in. Low calorie. Low carb. All sweet treat goodness. My favorites right now are the chocolate pudding with peanut butter cookie dough bites or vanilla pudding with fudge brownie dough bites. My last quick treat to grab from the freezer are the Enlighted ice cream bars. Callories go from 70 to 100 calories and a variety of flavors are available. My favorite are Sea Salt Caramel but all the flavors are pretty delicious.
