Mexican Green Beans

Hey everyone! We're a week late putting up the newest recipe and I apologize for that. Over the past 2 weeks our lives got a little crazy. However, I have a tasty side dish for you today that will be super simple and a great addition whenever you have Taco Tuesday at your house.


We also found a new club for my daughter to join during all the crazy. I am always looking for fun and new ways to get her out and about on a shoestring budget. This time we went to the library for Lego Club!!!! We found out our local library has Lego Club, Bark - reading to therapy dogs, a tween book club and a host of other free activities for my daughter that I didn't know was available. If you're like me and trying to keep a budget but need something fun for the kids you definitely need to go ask your librarian what activities they have coming up.

After attending the club we were starving and my daughter nearly always asks for either tacos or spaghetti when I ask her what she wants for dinner. I knew I had some keto tortillas and plenty of taco fixings but I didn't want to just eat tacos and rice. I need some more veggies on my plate for taco night.


That led me to scouring my pantry, freezer and internet for ideas. I found about 10 versions of Mexican Green Beans or Ejotes a la Mexicana and a bag of frozen green beans so after figuring out what I had that would be close this was my take on the dish. It was really tasty and made the meal feel more rounded out.


Ingredients:

•1 lb frozen green beans

•2 medium tomatoes, diced

•1 medium onion, chopped

•1 ½ tsp minced garlic

•1 finely diced jalapeño, seeded (I used freeze dried jalapeño)

•1 tsp salt

•½ tsp black pepper

•½ tsp dried cilantro

•½ tsp dried oregano

•½ tsp ground Cumin

Heat a nonstick skillet over medium high heat.

Add tomatoes and cook for approximately 2 minutes.

Add everything except the green beans to the pan.

Cook until the liquid is cut in half, approximately 4 or 5 minutes.

Add green beans and cover pan.

Cook until green beans are heated through and onions are soft.

Serve and enjoy!!!
