Mexican Street Corn

I hope all the dads had a very Happy Father's Day this past weekend!


We are officially in summer mode around my house. Afternoons by the pool. Grilling on the weekend. Finding activities so my daughter doesn't try to stare at a screen all day. One of our favorite things is to try and squeeze in a game of bowling on occasion. There is a small bowling alley owned by a local church where you can go on weeknights for $2 per game including shoes. Obviously, if you need to stretch a buck that would be a great way to have a little family time which is exactly what we did the other day.

Another thing that screams summer to me is corn on the cob. I love corn whether you grill, boil, microwave or any way I can get it. One of my guilty pleasures is grabbing Mexican Street Corn when I see it on the menu. However, since the sauce on the corn is usually mayo or a mixture of full fat sour cream and mayo I can't have that too often.


My version replaces the mayo/sour cream with Nonfat Greek Yogurt and Light Sour Cream plus I use the air fryer if we are cooking indoors. Obviously, if we are lighting the grill I will throw the corn on there for a truly smoky flavor.


Ingredients:

corn nibblers - partially thawed

butter

light sour cream

nonfat plain Greek yogurt

chili powder

Tajin

Cotija cheese

First, top corn with a little bit of butter and air fry at 390 for 10 minutes or until beginning to look toasted in spots. You can also put these on the grill or in the oven. The butter is for flavor but if you want to save those calories you can skip that too. Just make sure your corn is hot and toasty.

While that cooks mix together equal amounts of light sour cream and Greek yogurt.

Once your corn is cooked roll in the sour cream / yogurt mixture.

Sprinkle with your chili powder, Tajin & cotija cheese.

This is one of my favorite foods and I love that since I use the lighter sour cream and yogurt instead of the traditional mayo it is a lot lighter on the calorie count! We served this up at our house with hamburgers and a side salad and it was FABULOUS if I do say so myself.
