Microwave "Baked" Apple Slices

I hope everyone had an amazing week! This past Sunday we had Adoption Sunday at church. This particular special Sunday hit me very hard and in a good way. Not everyone is aware, and honestly there are long stretches of time that I kind of forget, but my parents adopted 2 of thier 4 children. I remember being only 12 years old and my parents taking myself and my 10 year old brother to meet this other kids. We went to Burger King and to the park with a set of brothers who were only 18 months and 3 1/2 years old. It wasn't long after that these 2 boys came to live with us as foster children and after some ups and downs eventually became a permanent part of our family.


These 2 little boys are now men grown with families of thier own. They had been dealt a bad hand and just needed the love and support of a loving family. I cannot imagine how our lives would have been different if we had never met them or accepted them. If you have never been involved or near to someone involved with fostering or adoption I recommend learning more. My husband and I have not felt called to adopt or foster in our home at this time but that does not mean that we have never talked about it. In fact, we talked about it quite a bit at one point in our lives and you never know when we might again.


My family would not be complete without these men in my life and I will forever be grateful my parents brought them into our home.... although I asked repeatedly for them to find another girl instead of my only having brothers. And I will always remind them of that when they tell me I pester them too much.

After my emotional meltdown and feeling like I really missed my family I desperately needed some comfort food. Something warm and sweet and comforting. That was when I remembered an old favorite of mine that is as simple as it can get. Microwave "Baked" Apple Slices.


All you need for this quick sweet dessert treat is an apple, apple pie spice, sweetener of choice, whipped cream, a microwave and 2 to 3 minutes to wait. Slice & core your apple. Sprinkle of your sweetener of choice (I used Whole Earth monk fruit sweetener), sprinkle with a bit of Apple Pie Spice, microwave for 2 to 3 minutes and top with your whipped cream. If you have a graham cracker or small cookie lying around I also like to crumble that on top but I did not have any on hand at the time.

Warm and comforting. Super simple but super low in calories. Mmmm. I might need to make another apple right now.
