Mississippi Pot Roast

I hope you all had a happy Easter!!!! Our family went to church and then spent the day at home. My daughter had 2 friends spend the night Easter night and chaos ensued, as expected. However, everyone seemed to have a great time. Something about hearing my daughter and her friends giggling over inside jokes or thinking they are getting away with something when they stay up past midnight just makes my heart smile.

Mississippi Pot Roast is one of those recipes that everyone has seen, heard, or tried at some point in the past. This certainly isn't new by any means. However, I like to be thrifty and so my take is without butter and using only ingredients I can pick up at Aldi. Often this recipe calls for a packet of Au Jus seasoning packet. Since Aldi doesn't carry that particular product, I use the brown gravy packet. I've also done this with mild banana pepper rings when the store was out of pepperoncini.


Another option to try is using Italian dressing mix or Onion Soup Mix instead of the ranch packet. Feel free to mix it up and try all the different varieties of mixes. I just love that this is literally a recipe where I put everything in the slow cooker, walk away, and am able to eat when I get home later.


Because I tend to be lazy when I'm just throwning things in my slow cooker on a Sunday morning, I did add a bag of bite sized potatoes, a bag of baby carrots, and an onion cut into a few chunks. When we came home I didn't have to make any sides to go with dinner since I had included the vegetables under the roast.


Ingredients:

•Chuck Roast

•Jar of Pepperoncini

•Ranch Seasoning Packet

•Brown Gravy Mix Packet

Preparation:

Place chuck roast in slow cooker

Top with both seasoning packets

Top with entire jar of pepperoncini

Cook on LOW for 8 to 10 hours or HIGH for 4 to 5 hours

I certainly love this meal. It's so simple. Also, you can use the drippings and liquid to make a really nice gravy.

Another nice thing with this meal is the leftovers. I love grabbing a low calorie pita and making a sandwich from the leftovers. Some roast, a few pepperoncini, maybe some onion cooked with it, and a tiny bit of shredded cheese. Once all of that is heated up this sandwich is THE BEST lunch on day two.
