Peanut Stir Fry Sauce

Hey everyone! This week I am actually away and not at home. Isn't it great that with technology I can schedule this in advance? Also, this is probably the shortest and quickest blog post I've created to date.

My daughter just finished second grade so we officially have a third grader on our hands. How did she get so big already? However, I am so incredibly proud of her this year. Her reading has improved and her teachers say all good things. Along with learning in school I like to occasionally pull her into the kitchen with me and learn a few kitchen basics. She can make herself a grilled cheese and she knows how to do the dishes. The number of adults I've met in my life that moved out and didn't know how to create a quick meal without take out or run the laundry has always bothered me so we are incorporating more and more general household things into her skills.


That said, knowing how to slice and chop without losing a finger and how to make a simple stir fry sauce are definitely good skills to have. We worked on those skills with this recipe.




Ingredients:

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp minced garlic (I used the kind in the jar)

6 tbsp powdered peanut butter

3 tbsp water

1/4 cup almond milk

1 tbsp honey

1 tbsp Lim Kim Kee chicken marinade

Blend everything and use for dipping sauce or stir fry sauce.

We used this for a stir fry dinner. A bit of chicken, tons of veggies and served over a combination of white rice and palmini rice. Sooooo good!
