Hey all! It's been ages since I posted. I wanted to give you all an update and start posting my recipes again. We had my daughter's summer break from school, a root canal emergency, currently have a hole in my ceiling from a leak, and it's just been a crazy time. However, we did get a family vacation mixed into all of the crazy and that was the best time. We even tried the famous Duck Donuts at the Outer Banks. Let me tell you.... they were seriously good. Absolutely worth the indulgence.
Since things are finally getting back to normal (other than my house being a construction zone), it is time to get back to tracking, creating, and posting a lot more. Yay!
I've been making this recipe for a long time. Honestly, it's not my recipe but I couldn't tell you where it came from. I found this recipe when I was gifted my first pressure cooker about 10 years ago. It's one of my favorites and when I made this again just last week for an event you'll notice that the "finished" photo already has a slice missing. It disappears quickly.
Pressure Cooker Ziti
Ingredients:
•1 tbsp olive oil
•1 cup chopped onions and peppers
•(I use the Pictsweet Seasoning Blend)
•1 tsp minced garlic
•1 lb. ground beef
•2 jars spaghetti sauce
•4 cups beef broth
•1 lb. ziti, uncooked
•**1 to 2 cups cheese (optional)
Preparation:
•Turn on pressure cooker to sauté function.
•Sauté vegetables and garlic in oil until soft.
•Add ground beef and brown.
•Add sauce and broth. Mix well.
•Stir in dry pasta.
•Pressure cook on high for 5 minutes.
•*Optional
•Transfer to 9x13 baking dish.
•Top with shredded cheese.
•Broil until cheese is melted.
This is so good and such a quick meal. Your whole family will enjoy it and won't know how little work you put into making dinner.
