We've had a busy couple weeks here in South Carolina. My last post was during my daughter's spring break. We had out of town guests and the week following was a lot of catching up and getting back into a normal routine again.
This past weekend I took time to have a Mother Daughter Breakfast Date with my girl. She enjoys getting that singled out attention and I enjoy getting to talk to her without the distractions of chores, errands, TV on in the background or whatever else may come up. We spend a solid 90 minutes at Chick-fil-A just having a great time together.
This weeks recipe does require one special piece of equipment if you want to make mini donuts. However, if you don't have a Mini Donut Maker you can still make this recipe as a mug cake. Just mix everything well and microwave for 1 minute. Check the batter and if it isn't quite cooked through put it back in for another 30 seconds.
I love mini donuts, donut holes, and other assorted bite sized desserts. My problem is that I love them too much. Once I eat one or two, I want to eat an entire box. This recipe was born out of a similar craving. Plus, I had my donut maker just sitting in a cabinet gathering dust. You can't possibly want to ignore such a pretty little appliance.
If you haven't heard of Dash or Nostalgia mini products but love to make small or single serve snacks/meals, you should really check them out. Every time you go online and see the viral chaffles, or fondly remember your sandwich maker for grilled cheese, or think you only need one burger and don't want to dirty a big pan for that.... Mini Appliances are right up your alley. I actually picked up a 4 pack after Christmas at Walmart of the Nostalgia brand mini omlet, waffle, grill, and donut makers all in one gift box for really cheap. I also have the Dash mini waffle maker and love them all equally.

For this recipe you'll need the following ingredients:
1 scoop vanilla protein powder (approx 35 grams)
1/2 tsp baking powder
1 tbsp coconut flour
1 pinch of salt
1/4 tsp vanilla extract
1/4 cup unsweetened almond milk
1 egg
1/4 tsp skinny syrup of your choice (I used Jordan's Skinny Syrups Maple Donut)
Directions:
Mix dry ingredients together with a fork.
Add remaining ingredients and mix well.
Heat a mini donut maker.
Spoon batter into each donut mold and close lid. Heat for about 1 to 2 minutes or until they begin to brown.
Remove donuts and continue until you have run out of batter. Should make approximately 12 mini donuts.
**If you would like a glaze for your donuts, mix a small amount of Swerve powdered sugar with water for a nearly calorie free glaze.
