Hey all!!!! I hope you had an amazing Thanksgiving. We spent our day with friends who have become family of our hearts and had a great time. Tons of food, lots of laughs and so much fun. I also told my best friend that if we were eating all day I need some exercise so we took 3 different walks through the day. Thankfully, it was also a beautiful day outside!
I enjoyed that beautiful weather over the weekend with a short hike with another friend. We had quite a group consisting of us 2 adult women, 3 children and 2 small dogs but I think that made it more of an adventure.
One of the dishes I contributed for Thanksgiving is a seasoned mixed vegetable dish. My husband is a picky eater who would rather eat vegetables rather than mashed potatoes or dressing so I always try to contribute something I know he will enjoy.
I will say I did not come up with this recipe but I honestly can't tell you where it came from. I've seen it multiple times on multiple sites and it's so easy I can easily see why it's so popular. I did use about 4 times the amount in the recipe below since I took it to an event with soooo many people.
Ingredients:
•1 tablespoon butter
•½ tsp minced garlic
•12 ounce bag frozen mixed vegetables
•1 teaspoon dry ranch seasoning
•Salt and Pepper, to taste
•Grated Parmesan Cheese
How to make it:
•Melt butter in skillet until it begins to brown
•Add garlic and cook until becomes fragrant
•Add the vegetables, ranch, salt & pepper
•Cover and cook for about 5 minutes or until heated through
•Add cheese to top just before serving
I actually made the vegetables ahead and placed it in a glass bowl. Before dinner I microwaved the seasoned vegetables and added the cheese after it had been reheated.
I honestly loved these so much. I can tell you we love seasoned vegetables and if you were to visit you would see this on our table pretty often.
