Summer break is finally upon us.... for the kids at least. My daughter is so excited for having the summer out of school. She is planning sleepovers, pool days and ways to drive me crazy while I work from home. Last year I wasn't so sure how I felt about staying home and trying to get everything done while she was with me. This year I am actually looking forward to sharing my lunch break at the pool or watching family movies with my girl.
Speaking of watching fun things on TV I wonder how many of you enjoyed the Friends Reunion? My friends and I all gathered together for a Friends themed viewing. We had Friends cookies, Joey's meatball sandwiches, Monica's dirty salad, Rachel's trifle and Chandler & Rachel's cheesecake along with other assorted goodies. Any excuse to get together with my girlfriends leads to a lot of laughs and fun.
When we get together there often is food involved and today's recipe is actually one of the things I make for nacho or taco night with a group. Unlike my usualy recipes this one if not light or low in calories. However, I think everyone deserves a break once in a while. Maybe one day I'll find a good way to lighten this one up but until then I hope this is a fun potluck or party dip you can make for a crowd. Also, unlike my previous recipes I made it and forgot to take photos. It is a seriously easy nacho cheese dip though so with just a few ingredients and a small slow cooker you will be ready to go.
I know most people associate nachos with Velveeta, American or other forms of processed cheese product more than real cheese. In our house, real cheese is king. If you are going to be making a cheese dip or cheese sauce hold the Velveeta and rotel in reserve until you try this recipe. It is just as simple but so much better in my opinion. Also, if you have a favorite cheese or hot sauce it is easy to change out the ingredients for this one. Lastly, feel free to use a larger slow cooker to add in taco meat, peppers, onions and tomatoes for a more hearty nacho dip.
All you need for this recipe is 2 blocks of sharp cheddar cheese, 1 block of pepper jack cheese, 2 cans of evaporated milk (12 oz), 2 tbsp corn starch and 1 to 2 tbsp Cholula hot sauce.
Mix the milk and corn starch until no clumps remain. Shred all the cheese. Add the milk mixture and cheese into a 2 quart slow cooker. Add hot sauce and turn the slow cooker to low. Stir occasionally for about 2 hours until the cheese has thoroughly melted. You will need to stir every few minutes to be sure it all mixes and melts evenly. Taste and add extra hot sauce if desired.
Once the cheese has melted into a smooth sauce you are good to go for your own nacho bar. Put the slow cooker on warm for party time and give another stir once in a while. That's all there is for the easiest but seriously good nacho cheese.
