Spicy Chicken Salad without Mayo

I know this post is a few days behind but I hope you didn't mind as we were celebrating Independence Day then adjusting to getting back to work. We spent time as a family, hosted a summer slumber party with 9 little girls giggling and running around, played games, went to church and hosted a cookout including bon fire and fireworks watching. Add in going back to work on Tuesday and it has been a busy week.

Once we finished with our busy weekend and began to find our groove again a great friend of ours asked if Abby would model again for her children's boutique. Of course, another part of surviving a holiday weekend is having a fridge full of leftovers. In this instance we had some leftover chicken breast that had been grilled. Is there really anything better than grilled leftovers with that smoky taste? Mmmmm. Anyway.... I saw chicken in my fridge on another 90 degree day and immediately thought of chicken salad.


I don't know about you but I am a mayonnaise hater. It is very rare that I use mayonnaise and even then it is in a way that I can no longer taste the mayonnaise. One day I'll share my crab cake recipe and you'll see it used as a binder and nothing more. I know I am not the only one who is against using mayo on everything so I thought today I would share my quick chicken salad recipe.

Before I put down everything needed for my chicken salad you should know I have one ingredient that can easily be replaced with finely chopped pickles or relish but I have learned that I really enjoy adding this in whenever I have it on hand. Pickle de Gallo was an Aldi find (and we all know how much I love Aldi) but can also be found in many other local grocers. The ingredients I used were all things I easily had on hand and mostly leftover from our cookout. Onion already diced up, celery sticks from a veggie tray, chicken from the grill. Yum!


3 oz cooked chicken breast, diced

1 tbsp onion, finely chopped

1 tbsp celery, finely chopped

3 pickled jalapeno slices, finely chopped

2 tbsp pickle de gallo

1/4 tsp Salad Supreme seasoning

1/4 cup nonfat plain Greek yogurt

dash of salt & pepper, to taste


Put everything in a bowl and mix it up well. If you choose not to have the spicy component you can leave out the jalapeno but I personally love a little heat.

Once it was all mixed I top it over a green salad (also leftover from our cookout) and had the perfect quick summer lunch. It is also great with crackers or in a wrap with some fresh tomatoes. Also, this makes enough for 2 people easily and is only 165 calories for the entire recipe.
