This has been a good two weeks. My daughter keeps asking to learn even more things she can do alone or with limited supervision in the kitchen. I love that she wants to learn to cook but letting her actually cook without me right over her shoulder is hard. She has a huge love of waffles and of pizza so we married the two together in a way that she could cook almost all on her own. I did actually pull the hot food from the waffle iron but otherwise I didn't do a thing.
If you want to know what a "waffled pizza" is for our home you start with canned biscuits, shredded mozzerella cheese and mini pepperoni. Stretch your biscuit out so it is a thin large circle, add cheese and pepperoni to the middle and fold the dough over so it seals. Spray a hot waffle iron with cooking spray and close the biscuit inside. After a couple minutes check to see if it is crispy and serve with marinara or your condiment of choice. She loved these so much we had them more than once in the same week.
In addition to my daughter working on her cooking skills we had the chance to see my brother this weekend. We haven't seen him in over 6 years so I was crazy excited! My daughter calls him "Uncle Bubbles" so we even gifted him with some bubbles during his visit. There is something amazing about seeing family that you once took thier presence for granted, and even threatened if they didn't stay out of your room, then do not see them for a long time. When you finally have that person in front of you the joy is extreme. We had a gorgeous day for walking, shopping, eating and visiting.
The problem with "waffled pizza" and then eating out with family is you have to get back on track once all the fun is over. The company I work for full time also has a fiscal year end in March so this month is busy trying to track down things and get explanations for others. Because of that when it is time for lunch I don't want to spend a lot of time preparing something. I need something quick and easy but also filling and healthy.
I like to keep shrimp that are already peeled and deveined in the freezer for quick and easy to cook protein. I seriously love shrimp. I also like to grab some of the frozen bags of vegetables that are pre-seasoned. Which is how I made one of my favorite 2 ingredient lunches.
Heat a nonstick skillet over medium-high heat. Add your shrimp and cook until they start to thaw. Add in the bag of vegetables and turn the shrimp. Place a lid over the pan checking and stirring every few minutes until the shrimp are pink and the vegetables are thawed. That is it! I used Birds Eye Shredded Carrots and Broccoli Florets with scallions and garlic. Although, any pre-seasoned frozen vegetable blend would work so try a few and find your favorite quick lunch.
