Wonton Soup with Frozen Wontons

Last week was my daughter's birthday. We celebrated for most of a week from her actual birthday getting some goodies from her parents, a Jojo party with decorating bows, lunch at one of her favorite restaurants and a surprise trip to Great Wolf Lodge. She had a blast and I have spent the last week getting back on track and trying not to go eat all the leftover ice cream or other goodies throughout the house. I can't say that I have been perfect with that but it has been better than it could have been.


In addition to staying away from all the birthday goodies once we were home a couple friends of mine just purchased Fitbits. Since I have been helping them with features or answering questions the idea of using the Challenges feature came up. I spent this past weekend working off everything I did wrong the previous weekend. Over 48 hours I managed a total of 45,462 steps and my legs are still killing me.... and I still did not win. All is good though because I needed that push to get back on track and moving regularly. One of the hardest things is coming back on track after taking a week off.


In honor of getting back on track I pulled out 2 of my favorite products. First, I know I had posted previously about using G Hughes Sugar Free BBQ Sauce and now I want to give a huge shout out to another G Hughes Sugar Free product. Only 5 calories for a tablespoon and full of flavor without all the sugar. If you have never tried any of the G Hughes Sugar Free Sauces or dressings I encourage you to go try it soon. I am not endorsed, affliated or anything else with any brands. Rather I am just a big fan of flavor without a bunch of calories.

The other shout out I absolutely need to give is for Bibigo Korean style Mini Wontons. These are so yummy and a serving is 13 pieces. I have tried them in the air fryer for a quick snack and in soup as I have done for this recipe. Keeping frozen prepared wontons, potstickers or other similar items in the freezer is always nice for a quick meal or hot snack when you don't have time to prepare them from scratch.

This is a seriously quick and easy recipe. Just throw everything into the pot and let it cook. I used my pressure cooker but really you can do the same on the stove in a pan. Just be sure that your wontons are no longer frozen and your vegetables are soft. Another plus of this being a quick soup is you can use fresh or frozen vegetables and you can add whatever vegetables you have on hand. Peppers, Onions, Bok Choy... all would have been marvelous.


For my wonton soup I kept this very short, sweet and simple.


1 tbsp Orrington Farms Chicken Broth Base plus 3 cups water (or 3 cups of prepared chicken broth)

1 tbsp G Hughes Sugar Free Orange Ginger Marinade

1 tsp Soy Sauce

1/2 tsp Fish Sauce

Chopped carrots, celery and scallions

13 pieces Bibigo Mini Frozen Wontons


I cooked them under pressure for 5 minutes but this could have been cooked even less. Just minutes to a delicious quick soup. This made approximately 4 cups. My large bowl was full right up to the edge. This is approximately 300 calories for the entire recipe.
